Greetings to our faithful and loyal Wild Type Ranch customers...

This month we need some input from you, as we transition a bit with our beef business. We are NOT going out of business, just streamlining it to make it keep functioning...

May and June will be where you CSA members will exit our CSA program, so those who wish to use their deposit to buy their final CSA pack need to make an order either this month or next. Please make sure that you leave a comment saying that this is your final CSA pack when you make your order.

If you haven't bought the pre-requisite 8 CSA packs as per the agreement, don't be alarmed, as we will pro-rate the cost of your final CSA pack, using the deposit divided by the eight packs. You'll get your last pack at a substantial discount. Those who have bought eight or more CSA packs will get their last pack paid for by the deposit that we hold. You have either May or June to do this, so you could still order and pay for May and then get the June pack at no further cost to yourself. After June there will be no more CSA program. Those who fail to order will miss out.

Which brings us to facing the future. We had been focusing on quarters and halves. The good news is that the gentlemen who bought our herd moved them only nine miles away and are using the same organic fertilizer, non-herbicide approach that we have been using. They will adhere to the same animal husbandry standards that we have worked with, and we can buy all the steer calves (based on our genetics) back after they have raised them.

Here is where we need the feedback from you. How about if we were to provide 45 pound packs that are an 'eighth' beef? That is just over two CSA packs, so usually would mean that if you're careful with how it goes into the freezer, you won't need a bigger freezer.

A typical 45 pound eighth would look a bit like this, but will vary with how the beef is cut...

    * 2 Chuck/Shoulder/Seven roasts
    * 1 Rump/Pykes Peak/Sirloin roast
    * 2 Boneless Ribeye steaks
    * 3 New York Strip steaks
    * 3 Filet Mignon (tenderloin)
    * 4 Top Sirloin steaks
    * 3 Bone-in Rib steaks 
    * 2 packages Cutlets
    * 1 Flank/Skirt (Fajita)
    * 2 Shank soup bones
    * 2 Neck bones
    * 2 Stir fry beef
    * 2 Kabobs
    * 2 Stew beef
    * 2 Chili Beef
    * 5 3-packs 1/3 lb patties
    * 8 to 10 Ground beef

As an avid cook, I keep pondering the possibility that some folk would prefer a lot more ground beef in the mix, maybe less chili, stew, stir fry, kabobs. We need to work on that, if it is the case.

The 45 pound eighth would cost $400, and would require a $250 deposit, or full payment (if you prefer) at the time of ordering, not at delivery. We need to do this, because your deposit will purchase a share in a living animal. You would at that point own a share in a beef animal that will be harvested. You will receive an email that acknowledges your ownership. From then on, we will assist you in translating that share into frozen vac-packed beef in your freezer.

The beef will be processed exactly the same as it has always been processed, by the same processor, but it will have the processor's label on it, that states that the beef is "Not For Sale". That is appropriate, because you (as the owner) are not supposed to sell your portion of that beef animal.

We plan to continue to facilitate delivery to the current monthly distribution points every second month, depending on demand. But it will be us helping you get your beef home.
