If you haven't already, it's time to place orders for February's market and deliveries.  We are very well-stocked for the month, so now is the time to reserve the cuts you've been craving.  We start our month with the Brazos Valley Farmer's Market this coming Saturday, Feb 15.  Next week, we're delivering to the Round Rock, Dyer and Temple delivery points. 

Ribeye cutlets, soup bones and short ribs in stock for February!  The online store inventory has been updated for February deliveries.  This month, we will have Ribeye cutlets (for the world's best chicken-fried steak), soup bones, brisket, oxtail, beef fat and organ meat available--all of which have been in short supply in recent months.  Value, variety and Grill Packs are also available this month.  And, as always, our tasty and tender steaks (tenderloin, bone-in and boneless ribeye, NY strip and sirloin)

Halves, Quarters and Eighths:  Don't forget, you can order halves, quarters and eighths in even-numbered months, saving up to 25% over retail prices..  Halves can be reserved for April by submitting and order and deposit by March 19.  Quarters and Eighths for April must be reserved by March 24  Bulk beef can be reserved through the end of 2014 via our online store.

Occasionally, we have a beef animal that exceeds even our high standards.  When we've got beef that is very well-marbled (high Choice or Prime) and extremely tender (4+/5 on the tenderness score) we designate it as "Captain's Cut".  In March, we will be harvesting a beef that missed that designation by 1/2 point on the tenderness scale.  We are offering 4 1/8th beef shares in March to our subscription members at the regular CSA price.  You may reserve one of these through the online store, even if you are normally a bi-monthly CSA member.   I will make the regular March share inventory available later this month.

If you want a CSA pack in February and have not yet ordered, I have extended the deadline to this Friday, Feb 7.  I will be packing CSAs on Saturday morning.  You may order a February pack even if you got one in January.  

There are a few extra January CSA packs still available The January CSAs were packed with beef dry-aged nearly twice as long as typical.  This special long-aging increases tenderness and flavor intensity.  This is the kind of flavor bragged about by high-end restaurants, although there are people who find it too strong.  If you would like one of these packs for February, let me know via e-mail or in your order comments and I will reserve one for you if it is available.  

If you have a January pack, please give us feedback.  We are considering doing this occasionally and offering it as a special item, if there is a demand.  

Summer Sausage:  We've got a fresh batch in stock and you can order extra 1 lb. sticks at a discount through the CSA member order page.

Here's hoping everyone survived our recent "snowstorm".  One of the ironies of ranch life is that the more the day beckons us to hunker down inside with hot tea and a blanket, the more urgent is the need to get out on the tractor to put out bales and break ice on the water tanks.  Thanks to Ralph's stewardship, the herd seemed unperturbed by our recent weather:

We have something special in stock, which will be available at the Brazos Valley Farmer's Market tomorrow, Jan 18.  This month, we dry- aged our beef nearly twice as long as typical.  This special long-aging increases tenderness and flavor intensity.  This is the kind of flavor bragged about by high-end restaurants.

Our January CSA customers will automatically receive this in the January packs.  We have a limited amount of dry-aged steaks available, which we will be selling at tomorrow's market.  Be sure to stop out between 8 and noon to get yours.

Whoever said life is what happens while you're making plans had it right.  Due to some major life happenings, we've had to significantly modify the delivery schedule for January and February.  The new schedule is updated on the calendar page, and is set out at the end of this e-mail.  If you have already place your order and this affects whether, where or when you want your delivery, please e-mail me to let me know.

Happy New Year to all!  With good soil moisture from fall rains, we are looking forward to the beginning of a great year at the ranch.  We start the year with three healthy heifers on the ground;  Isabella, Maya and Aphrodite.  As I type, I suspect our next cow is preparing to have her calf on the coldest night of the year--cows seem really good at calving in bad weather.  

Meanwhile, we're gearing up for January deliveries.  January (and all odd-numbered months) are the primary months for our CSAs, so our beef availability is a little more limited than it is in even-numbered months.  However, we still have a reasonable selection in stock.  Mid-month, once the deadline for CSA orders has passed, I will re-update the inventory.  So, if what you want is not available at present, check back in a couple weeks.

The holiday season is here!  I'm one of those people who look more forward to preparing for Christmas than to the day itself.  I'm enjoying playing Christmas carols at full volume (and singing along) out in the beef shed when I'm sorting and packing beef.  (and my husband is quite happy he doesn't have to be there to listen!).  

Our calving season has started.  We name all our calves, with the maternal lineage determining the name theme; usually something to do with music.  This year, our calving season began with the birth of Isabella (after the carol "Bring a Torch Jeannette, Isabella).  She is the daughter of Drahomira (after King Wenceslas' mother) and the granddaughter of Joy (twin to Comfort, born on Dec 21 of that year).  

Although we no longer have a large enough flock to sell eggs, we still produce our own.  Eggnog made with Dyer's raw milk and farm-fresh eggs is one of my favorite holiday traditions.  Here's a link to the recipe:  Cooked Eggnog.   Be sure to use fresh-grated nutmeg and high quality vanilla to do it justice.  

Brazos market date changed for December: Cameron Yoe are still in the football playoff hunt, and looking likely to go all the way to state!  To accomodate, we have changed our December date for the Brazos market to December 7.  The chief beef-packer will be out of town Mon-Thursday of next week, so orders placed after 3:00 pm today may not be invoiced, but WILL be ready for next Saturday's pickup.  

Holiday roasts: We have a limited number of very high-quality roasts for the holidays.  If you're looking for a special dinner idea, try a tenderloin roast with blue cheese sauce, or the slightly bigger strip-loin roast (New York strips in a roast form).

Liver back in stock:  We did not receive our organ meat from the processor in November, but we do have liver, oxtail and 1 package of sweetbreads in stock from our December harvest, available through the Value and Specialty Cuts online store page.  Sorry, but heart and tongue have already been spoken for.

It's time to place orders for  December CSA packs.  You may order your CSAs for December through the CSA member-only page of the online store.  Please place orders for November no later than Dec 6.

Remember that you now can order for either odd or even month delivery on the order page.  Odd-numbered months are still the primary months for CSA ordering, as we set aside two entire beeves for CSAs in odd months.  As inventory allows, there will be CSA packs available in even-numbered months as well. That inventory will be limited initially, and will be updated again after the deadline for non-CSA Half, quarter and eighths for even-numbered months has passed.  You may now also order CSA packs in both months, or order the bi-monthly share even if you are an eighth beef CSA customer.

CSA prices are set for the calendar year.  During 2013, we raised the prices on our half, quarter and eighth beef.  For 2014, we will be adjusting the CSA prices to reflect roughly the same price per pound as if you were buying a half beef.  Eighth beef CSA for 2014 will be $7.66/lb and the bi-monthly CSA packs will be $155.
