We'll be making our monthly appearance at the Brazos Farmer's Market this coming Saturday, Feb 16.  We have plenty of ground beef, hamburger patties, chili beef and our latest batch of summer sausage!  You can purchase onsite at the market or you can place an order online here.

Ground Beef is stocked up: If you've been wanting to order our 10-packs, but haven't been able to for a while, now is your chance! The ground beef we have in stock will have 2-3 Tbsp of drainable fat per pound when cooked; a little higher fat than our typicial.

Bulk Beef: We have eighths, quarters and a half-beefs available even numbered months, starting in April.  You can now reserve bulk beef through the end of 2013 via the online store.  We still have a considerable waiting list for our CSAs, so ordering a half, quarter or eighth is a good alternative for saving money on beef.  Eighths are $8.50/lb of packaged beef and quarters are $8.25   Halves are $4.75/lb of hanging weight (about $7.50/lb packaged wt). A $200 deposit holds your spot until your beef is harvested.   You may pay your deposit via Paypal, as well as by mail or through a bank draft link on our invoices. 

Packs will be available in March: We are unable to fill orders for packs through February, but will be able to do so again in March.  I will be refreshing the online store inventory early next week, to enable ordering for March.

We're all set for the 2013 beef market season, and have made a few changes. Pickup point this year will be the Brazos Farmer's Market (Bryan), Crossfit Cedar Park (Cedar Park), Arboretum Brick Oven (Austin) Live Oak UU Church (Cedar Park) and Dyer Marcantile (Georgetown).  We will not be selling at the Georgetown Farmer's Markets in 2013.  Please note also that the pickup time for Tillman will now be 2:30-3:00 and for the Arboretum will be 11:15-11:30.

Ground Beef is stocked up:  We have plenty of ground beef again!  If you've been wanting to order our 10-packs, but haven't been able to for a while, now is your chance! Because our beef is almost always lean, we have eliminated "extra lean" ground beef.  Should we ever get beef that exceeds our fat criteria, we will list it as such ("high fat") on our order page.

Bulk Beef: We streamlined the process for ordering an eighth, quarter or half beef.  You can now reserve bulk beef through the end of 2013 via the online store.  You may also now pay your deposit via Paypal, as well as by mail or through a bank draft link on our invoices.  We still have a considerable waiting list for our CSAs; ordering a half, quarter or eighth is a good alternative for savin money on beef.

One of our quality control measures is to taste-test a steak from every animal we sell. It's a tough job, but my husband and sons are willing to make the sacrifice :-)  We evaluate flavor, juiciness and tenderness. Typically, we have a 2-3 beeves per year that meet our top-shelf standards and get marketed as "Captain's Cut".  The drought has been hard on the marbling (intramuscular fat that adds juiciness and flavor) in our beef, and we've not been able to market any beef under that brand.

This past week, however, we taste-tested our best steaks of the year.  These steaks are well into the prime-level of marbling and were extremely tender.  We are selling them individually for the first time, just in time for those special meals at the holidays.  There is a limited inventory available through our online store.  You can place an order now for pickup any time before year-end.  
 
We also cook, drain and measure the fat on our ground beef each harvest.  The opposite side of prime beef is fatter ground beef.  The ground beef we have available for sale at the moment has a higher level of fat than our typical 80-90% lean.  We estimate it to be closer to 70% lean.  To make sure our customers know what they are purchasing, this ground beef is listed under "High Fat Ground Beef" in our online store
 
We have several delivery points coming up, including the Arboretum next Monday Nov 12.  Orders for Monday need to be in by 5 pm Sunday.  Note: if you are ordering for December, check back after Nov 30, when quantities will be reset following our next beef pickup.

We've got a well-stocked freezer going into tomorrow's Brazos market and the Austin-Arboretum delivery on Monday. Stock up on beef while you can!  You can order online through our website to reserve your beef, or buy on the spot at Saturday's market.  Arboretum deliveries are by order only.  Visit our online order page to place your order.  The inventory has been updated, so you'll see what we have in stock as of today.  
 
Orders for Saturday's market need to be in by 5 pm this evening.  Orders for Monday need to be in by 5 pm Sunday.  Note: if you are ordering for November or December, check back after Oct 25, when quantities will be reset following our next beef pickup.

Thanks to everyone for all the well-wishes and concern for Ralph.  Latest x-rays confirm his broken vertebrate is healing as expected, but recovery will take a while.  We remain grateful that he wasn't hurt worse!

I think there's a reason why it's difficult for ranchers to get health insurance: It's a job filled with unavoidable work hazards.  We learned that the hard way this week.  Ralph was in an ATV accident while rounding up cows, flipping the ATV and ending up with two broken ribs and a broken vertebra.  He has been in the hospital most of this week, but we hope he will be home by Monday.  We are fortunate that there is no paralysis, just a long recovery period.

Consequently, we have rescheduled and limited our delivery and markets for September, as I will be doing double duty here for a while!  The new schedule is below for September and October,  Our apologies for any inconvenience this may cause.  PLEASE NOTE the Sep 22 Brazos market is at a one-time-only location, as the Health Department parking lot where we usually have the market is being resurfaced.
 
 
Changes to Pack Ordering: Due to our decreased volume this year, we find we are having difficulty filling packs with the specified cuts.  Consequently we will now be filling packs at the beginning of the month's beef cycle only. Pack orders placed before the 10th of the month will be filled for the current month's deliveries.  Pack orders placed after the 10th of the month will be filled for the following month's delivery.

Just a reminder that we took a break from harvesting beef in July, so there will be no beef deliveries in July.  We will be selling beef in August as usual.  The tentative August schedule is at the end of the e-mail.  We will also resume stocking Village Foods freezers by mid-August.

I have made a guestimate of what beef will be available in August over and above the standing CSA orders and updated the inventory in our online store.  Any orders received this month will be packed for August delivery.

I do have some eggs available.  I will be at the Brick Oven on Monday, July 9 and can deliver eggs.  We are out of stock on summer sausage until August.

We at Wild Type Ranch are committed to bringing you the highest quality, healthiest beef available through breeding the best genetics for tender and juicy beef and raising them in a natural, wholistic environment.  There are just some things we can't control.  We are still feeling the effects of the drought, and the stress it put on our land and our animals.

Over the past several months, we have seen evidence of stress-induced issues in some of our cattle.  Two of our cattle were not processed into beef because of these issues.  We have decided to suspend processing of any additional cattle for beef until we can identify the source of the problem and fix it.  We want to assure our customers that we will cull any cattle that don't meet our high standards (including any that need antibiotic treatment), rather than selling them under our brand.  We are hoping to resume processing and selling beef in August.

Meanwhile, we will be making deliveries this coming week and WILL be at the Georgetown and Brazos Valley Farmer's markets.  We have filled our CSA orders for the month and will be filling as many existing orders as we can.  
 
Eggs and Summer Sausage still available:   We have plenty of eggs and a good supply of summer sausage in stock.  We will have these items available for individual sale at all our delivery and market points, as well as by advance order.

Does anybody else feel like the past few weeks have been busier than any other time of the year?  I think my boys have had one sort of special school-year-end activity nearly every day.  No wonder I'm exhausted and behind on my beef duties (and e-mails)!

I HAVE finally sorted, inventoried and packed up beef for the month.  We have more beef in stock  than we have for the last couple months.  Inventories are updated on the online order page.  Order soon for the best chance to get your desired cuts.

Dewberry Festival Market replaces Brazos Market for this month:  Being on the Ag committee of the Cameron Chamber of Commerce, I am heading up Cameron’s first-ever farmer’s market at the city’s annual Dewberry Festival on May 19th.  The market will run from 8:30-1:00, with the Festival activities continuing on until 4:00.  There will be activities for all ages including: Bicycle Decorating Contest and Parade; Pet Parade; Arts & Crafts Booths; Classic Car Show; Food Booths; live Entertainment; Horseshoe Tournament; Youth Fishing Tournament ; Farmer's Market and Free Dewberry Cobbler and Ice Cream. There is also a Dewberry Cobbler and Cake Auction following the Cake and Cobbler Bake-Off, with monies from the auction to benefit the Milam County Child Welfare Board. 
            We still have some vendor spots for home or professional gardeners and producers, if you would like to sell at this market (no stall fees this year!).  Contact me or the Cameron Chamber of Commerce for an application form.    
 
Special Village Foods Delivery Point:  For those of you who cannot make it to the Dewberry Festival, I will be making a special CSA and order delivery to Village Foods on Wednesday, May 16, from 12:30-1:00. My husband, Ralph, will be in the parking lot, with our“Wild Type Ranch” Honda Ridgeline to delivery your order.  

Eggs, eggs, eggs! Our girls have been working overtime and for once, we are well-stocked with eggs.  For on-line orders and purchases at the Dewberry festival, we are having an unprecedented sale of $3.00/dozen, while supplies last.  Price will be adjusted on your invoice. 

Changes to Pack Ordering: Due to our decreased volume this year, we find we are having difficulty filling packs with the specified cuts.  Consequently we will now be filling packs at the beginning of the month's beef cycle only. Pack orders placed before the 10th of the month will be filled for the current month's deliveries.  Pack orders placed after the 10th of the month will be filled for the following month's delivery.  
 
Special Items in stock this month:  We have beef fat (for rendering), a beautiful whole tenderloin roast and oxtail in stock in limited quantities.  We also have summer sausage back in stock (and stocked at Dyer Mercantile).

  • Dyer Mercantile (7801 E. Hwy. 29, Georgetown) carries our beef in the “Wild Type Ranch” freezer.  Regular hours are weekdays (except Wednesday) 10-7 pm , Saturdays 9 am-7 pm and Sundays 1 pm -6 pm.

Our first and only veal of the year is available now: Our veal is 100% pasture-raised with the herd, eating only grass and milk. The veal inventory is up-to-date on the Veal department of the on-line store. This is the only veal we will have available in 2012.
 
Changes to our delivery and market schedule:  When we started Wild Type Ranch seven years ago, one of our goals was to create a business that would allow us to participate fully in the lives of our young sons.  Those young’uns are now 10 and 12, with increasingly busy lives.  Their activities, together with our lower supply of beef has led us to streamline our market and delivery schedule for the remainder of 2012.  Effective this month, we will no longer be making regular appearances at the Sun City or Round Rock markets.  We WILL be appearing monthly at the Georgetown Thursday afternoon market (usually the third Thursday of the month) and the Saturday Brazos Valley Farmer’s Market (usually the third Saturday).   We will continue the Riata, Arboretum and Tillman deliveries as usual.
 
Special Items in stock this month:  We have sweetbreads, beef fat (for rendering) and oxtail in stock in limited quantities.  We will also have summer sausage back in stock (and stocked at Dyer Mercantile) by late next week.

New Georgetown Market Location:
The Thursday afternoon Georgetown market has moved to a new location, effective immediately.  The market will be in the Church of Christ parking lot at 1525 W. University Avenue.

As you may be aware, we are harvesting less cattle this year, due to last season’s drought-induced culling.  Through winter and spring, we are harvesting only enough cattle to cover our CSA needs, with little extra.  This month we are particularly short, so we are encouraging advance orders through our website.  I will be filling orders in the order they come in.  We will make whatever beef we have left available for sale at the Brazos market, Saturday.
 
Perhaps it is serendipitous for us to be short of beef this month.  We are finally ready to move into the house we’ve been building on the ranch, starting next week.  So, being short of beef, we will also have an abbreviated delivery schedule this month, to also facilitate our moving.  We will be making the Arboretum, Georgetown, Tillman and Brazos deliveries as usual, but no Round Rock, Sun City or Live Oak appearances this month
