Wild Type Ranch is on Facebook!

News and blog

Welcome to the blog.
Posted 4/6/2012 5:14pm by Ralph Mitchell.
Our first and only veal of the year is available now: Our veal is 100% pasture-raised with the herd, eating only grass and milk. The veal inventory is up-to-date on the Veal department of the on-line store. This is the only veal we will have available in 2012.

Changes to our delivery and market schedule:  When we started Wild Type Ranch seven years ago, one of our goals was to create a business that would allow us to participate fully in the lives of our young sons.  Those young’uns are now 10 and 12, with increasingly busy lives.  Their activities, together with our lower supply of beef has led us to streamline our market and delivery schedule for the remainder of 2012.  Effective this month, we will no longer be making regular appearances at the Sun City or Round Rock markets.  We WILL be appearing monthly at the Georgetown Thursday afternoon market (usually the third Thursday of the month) and the Saturday Brazos Valley Farmer’s Market (usually the third Saturday).   We will continue the Riata, Arboretum and Tillman deliveries as usual.

Special Items in stock this month:  We have sweetbreads, beef fat (for rendering) and oxtail in stock in limited quantities.  We will also have summer sausage back in stock (and stocked at Dyer Mercantile) by late next week.

New Georgetown Market Location:
The Thursday afternoon Georgetown market has moved to a new location, effective immediately.  The market will be in the Church of Christ parking lot at 1525 W. University Avenue.

The delivery and market schedule for April is below:

Sunday, April 8, Live Oak UU Church (3315 El Salido Parkway) 12:00-12:30
Monday, April 9, Riata Bar and Grill (12221 Riata Trace Pkwy, Austin) 10:45-11:00
Monday, April 9; Arboretum-Brick Oven (Next to Jolleyville HEB) 11:20-11:45
Thursday, April 19; Tillman PT Delivery (2519 S. Lakeline Cedar Park) 12:45-1:15
Thursday, April 19; Georgetown Farmer’s Market 3:30-6:00 NOTE NEW LOCATION: 1525 W. University Avenue (Church of Christ parking lot).
Saturday, April 21, Brazos Farmer’s Market 8-noon Wm. J. Bryan and Texas Ave
By arrangement at the ranch
By arrangement Thursdays at Dyer Dairy

Check out the Calendar page of the website for the most up-to-date schedule of markets and deliveries.

REMEMBER TUPPERWARE? As we prepare to move into our new house, which was constructed with many 'green' features, it has renewed our commitment to lower our impact on the environment.  Reduce, reuse, recycle!  So, I am now selling Tupperware, as well as beef.  You can browse and order on-line through my personal page:  www.my.tupperware.com/sarafaivredavis.  Did you know that all Tupperware sold in the US is BPA-free?

OUR BEEF AT RETAIL:  Check out  the retail outlets that carry a selection of our beef.  If they don’t have what you want, just ask, and we’ll do our best to start stocking it.
  • Village Foods 1760 Briarcrest Drive, Bryan, carries our beef in a special freezer for “Natural Beef”, across from the fresh meat case.  Village Foods has been great about working with us and other local suppliers.
  • Dyer Mercantile (7801 E. Hwy. 29, Georgetown) carries our beef in the “Wild Type Ranch” freezer.  Regular hours are weekdays (except Wednesday) 10-7 pm , Saturdays 9 am-7 pm and Sundays 1 pm -6 pm.

As you may be aware, we are harvesting less cattle this year, due to last season’s drought-induced culling.  Through winter and spring, we are harvesting only enough cattle to cover our CSA needs, with little extra.  This month we are particularly short, so we are encouraging advance orders through our website.  I will be filling orders in the order they come in.  We will make whatever beef we have left available for sale at the Brazos market, Saturday.

Perhaps it is serendipitous for us to be short of beef this month.  We are finally ready to move into the house we’ve been building on the ranch, starting next week.  So, being short of beef, we will also have an abbreviated delivery schedule this month, to also facilitate our moving.  We will be making the Arboretum, Georgetown, Tillman and Brazos deliveries as usual, but no Round Rock, Sun City or Live Oak appearances this month

The delivery schedule is below:

Saturday, March 10, Brazos Farmer’s Market 8-noon Wm. J. Bryan and Texas Ave
Monday, March 12, Riata Bar and Grill (12221 Riata Trace Pkwy, Austin) 10:45-11:00
Monday, March 12; Arboretum-Brick Oven (Next to Jolleyville HEB) 11:20-11:45
Thursday, March 15; Tillman PT Delivery (2519 S. Lakeline Cedar Park) 12:45-1:15
Thursday, March 15; Georgetown (same location as the farmer’s market) 4:15-5:15 San Gabriel Park
By arrangement Thursdays at Dyer Dairy
Pickup is also available most times by arrangement at the ranch. Please call 512-826-2218 or e-mail sara@wildtyperanch.com to arrange.

Woohoo!  Several inches of rain over December and January mean our cattle are FINALLY out grazing fresh grass!  They've been eating alfalfa and grass hay for nearly a year, due to the drought.  It's wonderful to see the black and red coats against the bright green.  As if to celebrate, one of our cows delivered us a cute little red heifer this week:  We've named her "Norma Jean" to continue the name-line of her mother, who is "Candle in the Wind".

The green grass is also being appreciated by our chickens.  They sure love that fresh clover.  In response, our egg production is back up from the winter doldrums.  At the moment, we have extra eggs available.  They can be ordered through our online store: http://wildtyperanch.com/store/546.

Saturday starts our monthly delivery and market schedule.  I pack orders on a first-come, first-served basis, so even if you aren't taking delivery until the end of the schedule, it is best to get your order in early.  We are beginning to feel the pinch of smaller supplies, due to the culling we did in the drought.

BRAZOS MARKET VALENTINE'S CELEBRATION:  We will be at the Brazos market this coming Saturday.  The Friends of the Market are hosting a special Valentine's celebration that day, with face-painting, scavenger hunt and seed-pot construction for the kiddos.  Come on out and pick up something special for your Valentine's dinner!

WINTER DELIVERIES:  The Georgetown/Round Rock markets have closed for the season, but we will continue to make monthly deliveries to our market spots.  We will be at each spot for a short time once per month to allow our CSA customers and anyone who places an order to pickup beef.  Can't have y'all going to the supermarket for beef!  The schedule for February is below.

OUR MARKET AND DELIVERY SCHEDULE:

Saturday, Feb 11, Brazos Farmer’s Market 8-noon Wm. J. Bryan and Texas Ave

Our New Year has started with some much needed rain. It is good to see the tanks with water in them, and the green beginning to brighten the landscape!

As you may already know, we have downsized the herd due to the drought.  We will be selling approximately half the amount of beef in 2012 as we did in 2011.  Our CSA customers are first in line for each month's harvest.  After we pack the CSAs for the month, we fill orders in the order in which they are received.  The remaining beef will be available for sale at the farmer's markets.  We are also scheduling requests half and quarter beef.

We're just starting our January delivery schedule, which is below.  If you miss our delivery dates, you can get our beef, along with plenty of other local products and the best raw milk in Texas at Dyer Mercantile (7801 E. Hwy. 29, Georgetown) or at  Village Foods in Bryan.

LEAN BEEF SPECIAL:  Did you make a resolution to eat better in 2012?  We can help.  Two of our most versatile, easy-to-prepare and leanest cuts are 25% off all month.  Some of my favorite recipes for these cuts include Yogurt Marinated Steaks and Beef and Spinach Lo Mein.

The schedule for January and February is below.

The holiday season is fully upon us!  Are you ready?  As a small business owner and resident of a small Texas town, I would like to encourage everyone to do as much local shopping as possible this year.  Our own town of Cameron has created a Shop Cameron  website to highlight our local businesses.  You can visit our ranch listing for downloadable coupons each month.

Along those lines, we have added a gift certificate section to our online store.  We are also now accepting Paypal for gift certificate orders.  We have certificates available for any of our packs, for a trial CSA enrollment (3 monthly or bi-monthly packs) and in dollar amounts.

BRAZOS MARKET THIS SATURDAY-we'll have tie-dye!  We will be at the Brazos Valley Farmer's Market this Saturday, which will be the last time we are there until Jan 21.  Be sure to come stock up. We will also have our newest edition of tie-dyes available.  You can sneak a peek on our Facebook album.  If you're not a Brazos market customer, but are interested in purchasing any of the items in the album, e-mail me for prices and sizes on specific items.

Charles Darwin claimed that those most fit win to the struggle for survival were those best able to adapt to their environment.  We've certainly had our share of lessons in adapting in the six years we've had the ranch, but none moreso than this year.

We've weathered this year's drought, so far, but are having to adapt to stay in business.  We have worked to be sustainable so as to produce what our cattle eat.  With no rain, though, we've had to adapt by buying in hay from Colorado, Kansas and South Dakota.  We're even piping water to the pastures from the municipal supply.  Hay is costing twice (or more) what it usually does.  Normally, we can graze 2/3 of the year without feeding hay.  We've now been feeding hay for 18 months with only occasional breaks for grazing.

Last Friday, we bid goodbye to most of our mature cows.   They are headed to another grass-based producer in Arkansas. At least our investment in great beef genetics will continue to provide dividends to consumer and producer alike.  We have kept a handful of our best mamas, all of our cattle scheduled for harvest for the coming year and our young heifers.  We've stockpiled enough hay to get through the next year with our reduced herd.

Economically, we've had to adjust by raising our prices.  Although we love what we do, both of us work full time at producing and marketing our beef, knowing that every pound we sell currently costs us more than its selling price.  We have calculated and estimated and projected, and have come up with a price list that shares the risk of surviving through the coming drought/recovery years.  We're satisfied with covering our costs while we see how things develop, and that's pretty much where we set our prices.  When the rains come, we hope to be in place with a once-again-viable business.

The new prices will go into effect with the November markets.  We will honor the old prices for any orders placed with us at least 24 hours before any November market.  In addition, the CSA, half, quarter and eighth prices have increased by less than the cut prices.  The decreased labor in selling in bulk is being passed on to our customers.  This is a great time to consider filling your freezer or joining one of the CSAs.

Thanks goes out to all of our customers who have shown their concern for our wellfare and encouraged us over the past year.  If we didn't deal with such wonderful people in our daily life, we wouldn't be making such efforts to continue.

FOOD DRIVE:  Bring a can, get $1.00 off.  We will be collecting canned and boxed food for Milam County, in conjunction with the Milam County Lions Clubs and Eric and Alex's scout troops.  For every canned good or boxed item, we will give you $1.00 off one beef item this week at the Georgetown Farmer's Market.

HOLIDAY ROASTS:  If you'd like a change from turkey this year, try a premium beef roast.  Here's the run-down on our best roasts:  We have a few Tenderloin and Strip Loin Roasts in stock and available for order or purchase at the upcoming markets.
  • Tenderloin Roast:  This is the most tender roast possible.  Typically cut into filet mignon steaks, this smaller roast is easy to cook, and goes great with a number of sauces.  We carry this roast in stock in 1.5-2 lb sizes.  Special orders can be placed for sizes up to 4-5 lbs.
  • Strip Loin Roast:  This boneless roast comes from the same cut as the New York strip steak.  Strip loins are an excellent carving roast, and come in sizes from 2-9 lbs.  We will carry a few of these in stock, but special orders are recommended.
  • Standing Rib Roast:  This is the queen of holiday beef roasts.  This bone-in roast is often called "Prime Rib Roast", and is usually served rare to medium.  Leftovers of rare or med-rare roast can be sliced and quick-grilled for a fantastic steak.  Standing rib roasts range from 3-18 lbs and are special order only.
Sun City and Round Rock special orders can be place through November 8 for delivery in November.  Special orders for December need to be placed by November 23rd.

LAST MARKETS OF THE SEASON:  The Round Rock, Georgetown and Sun City market season runs through November, so the upcoming dates for those markets will be the last for the season.  We will continue to make deliveries to the Round Rock and Georgetown sites once per month through the winter.  The winter schedule will be finalized and posted on the website calendar soon.

GIFT CERTIFICATES AVAILABLE:  Why not give someone the gift of great beef this holiday?  We have gift certificates available in any amount or for specific packs/items etc.  We are offering a special "Trial Subscription" gift certificate this year, which is 3-months prepaid monthly or bi-monthly CSA, with no deposit.

Wild Type Beef no longer at Stover Bros.
Please note that Stover Bros. is no longer using Wild Type Ranch beef for their burgers.  Thanks to all of you who were loyal WTR burger fans!  You can still purchase our beef through the meat department at Village Foods.

This weekend is something special at the Brazos Valley Farmer's Market.  It is the annual Demo Days, where vendors give demos on some of their skills, such as soap-making and blacksmithing.  In addition, we will be doing  Reverse Trick-or-Treating and handing out samples of Fair Trade Chocolate and information about unfair child labor practices in many cocoa producing countries.  Stop by the booth for a sample!

Fall harvest season is a good time to think about sharing with those whose harvest may not be as bountiful.  My boys' scout troops are participating in a food drive, and we'll be collecting canned and dry goods (see below for a special offer).

Wow!  I can't believe it's already time to start thinking about the end-of-year holidays!  Thanksgiving is not that far away, and the calendar is beginning to look full of activities as we rush toward the end of the year.  I've already received some orders for Thanksgiving roasts!

Deadline for special orders is October 25 for Tillman, Georgetown, Brazos, Arboretum and Live Oak November delivery.  Sun City and Round Rock special orders can be place through November 8 for delivery in November.

Round Rock Market this Saturday:  We'll be at the Round Rock Market (in the Scott and White parking lot) from 8-noon on Saturday, October 15.  Follow us out on Facebook for the latest specials and updates.  We will bring our tie-dye, too!

Live Oak UU Church deliveries Sunday:  This Sunday is our monthly pilgrimage to our favorite church.  After church (~12:15), we'll be available for deliveries (and have a little extra for sale).  I will have our tie-dye there as well.  Please have orders in by 6 pm Saturday.

Fair Trade Chocolate:  This year, we are doing something special for Halloween.  At the October 29 Brazos Valley Farmer's Market, my boys and I will be handing out samples of Fair Trade Chocolate and information about unfair child labor practices in many cocoa producing countries.  If your family would like to participate by
Reverse Trick-or-Treatingthere is still time to order a kit on-line.
