We will be packing CSAs for July at the end of this coming week.  This month, we will be going light on the roasts for the 1/8th beef packs (bi-monthlies will still get either a roast or brisket), and we've mixed in some K-bobs, more patties and stir fry to reflect summer cooking patterns.  July packs should be ordered by Friday, July 4 to ensure fulfillment, although any extras will remain in inventory.  Please order through the CSA member only order page, to make sure your order gets processed.   

BRAZOS CUSTOMERS:  Please note we've had to move our Brazos market date up to July 5 to accommodate the family's summer activity schedule.  If you would like a pack in July, but cannot make it to the July 5 market, I can arrange to meet you at Village foods on Tuesday, July 15 about 5:30.  Just let me know via a note in the comment section of your order.

OTHER DATE CHANGES FOR JULY:  Live Oak deliveries will now be on July 20.  Round Rock deliveries will be from 1:30-1:45 on July 15 (rather than the usual 1:15-1:30).  Note there will be no Temple or Round Rock deliveries in August

Special Brazos Market June 21:Brazos customers should plan to be at the June 21 market for a special market-to-menu event.  There will be cooking demos (and samples) with our beef as one of the featured ingredients, special informational booths and more!  There are always lots of vendors at this event, and now is a good time for produce, before the real heat of summer hit.

E-mail member pack special:  As an added feature at the Brazos Market, we will have special "e-mail list member" sampler packs for new and existing members of our e-mail list.  These packs will contain one steak, one roast, one variety cut (stew, stir fry, cutlet, etc.) and two pounds of ground beef.  The packs will sell for $55 and have a retail value of $68-75 (save 20-25%).  Limit one pack per customer, and must be a member or sign up for our e-mail list.  

CHUCK ROAST MEGA-SALE: We are overstocked on chuck roasts!  They are on sale through the month of June for $5.35 per pound--a full $2.00 per pound savings.  Although summer isn't a typical roast season, a crock-pot roast can be a good alternative to heating the oven up.  Or cook them down for shredded beef barbecue!

Our June deliveries start Monday with the Brick Oven/arboretum and continue from there.  Place your order by the evening prior to your desired delivery date via our online store.

June is our "off" month for CSAs, meaning the bulk of our harvest is set aside for other orders.  However, there are a limited number of packs available.  June packs must be ordered by Friday, June 6 at 3 pm.  Please order through the CSA member only order page, to make sure your order gets processed.   We will not be packing any extra CSAs this month, so once the deadline is passed, you will need to wait until July.

The heart and tongue in inventory are available for June.  The inventory will be updated for July once the June deadline has passed.

Clearance Sale at Brazos Market:, We will be clearing out our freezers when we're at the Brazos Valley Farmer's Market on May 31.  This will be a good time to stock up on grilling cuts for those summer cookouts.  On sale:  Chuck Roast-$6.35/lb (save $1.00); Cutlets, rump roast and stir fry beef on sale for $7.50/lb, Bone-in rib steak and NY strip steaks on sale for $12.25/lb (save $4-5/lb).

Special Cuts in Stock: By popular demand, we have T-bone steaks, ribeye cutlets, and loin K-bobs this month.  Short ribs, soup bones and tongue were in inventory as of the writing of this letter, but will not last long.  The bountiful spring grass means extra-rich fat for rendering.  We have 1 8-12 pound bag in stock for rendering.  (who remembers what french fries used to taste like before vegetable oil?)

Time to order CSA packs for May (and June).  Our May deliveries start on May 3, so we will be packing CSAs on May 2nd.  Please place your order via the online store, no later than Friday (May 2) noon, to ensure your pack for May.

 Whew!  it's been a crazy start to our spring.  Aside from the usual calving and other cow-related activities, we've had more than our share of extra excitement.  A month ago, both our working Mama Blue Heelers gave birth to a total of 13 puppies!  They are just beginning the weaning process. and will be ready to find new, active lifestyle homes in a week or two.  Email us if you would like more information.  On the down side, the late March storm hit us pretty hard, turning our hay barn into a twisted pile of metal and downing several trees (and the fence underneath).  Thanks to Ralph's hard work and the hands of some neighbors, we are nearly cleaned up, and all our cattle are back home where they belong.  

We're running a little behind on the beef business, but will be ready to start our April deliveries as scheduled.  Now is the time to place your orders for any of the delivery dates between now and May 1.  Please place your orders through the online store.  

Packs:  We have Value, Variety and Grill packs in stock.  Price-saver hint--packs are now a better value than ever!

Halves, Quarters and Eighths:  One of the best ways to lower your cost is to order halves, quarters and eighths in even-numbered months, saving up to 25% over retail prices.  Halves, quarters and Eighths are available in even-number months.Bulk beef can be reserved through the end of 2014 via our online store.  Price per packaged pound is $9.25 for eighths and $9.00/lb  for quarters.  Halves are priced on a carcass hanging weight (non-cut) basis and are $5.25 per pound hanging weight, which converts to $8.00-$8.50/lb packaged weight.

A clarification on the general price increases, that was sent out to the general e-mail list.  

As CSA members, you price is guaranteed for the calendar year.  So, you will not see an adjustment to CSA prices until January 2015.
