Greetings friends and customers of Wild Type Ranch!

Firstly, may we wish you all a very happy New Year, with a wish for it to bring health, fulfillment, happiness and prosperity...

2016 has definitely been an interesting year in many aspects of life worldwide. Many folk might possibly feel that 2016 wasn't a particularly good year in many regions globally, but we would like to look on the positive side of 2016 from a personal (ranch) perspective.

Here at Wild Type Ranch we are particularly thankful for the 54 inches total rainfall that has been wonderfully spread out across this past year. We have been blessed to have this vital life support delivered in a timely manner by Mother Nature, helping us to maintain lovely green pastures that our herd totally relies upon for sustenance. That has let us continue to bring top quality grass-fed natural beef from our pasture to your plate. It has been a privilege to do so, and we thank you for your support. It is very much appreciated.

Cow-share (CSA) customers, now is a good time to check what you have in your freezer and order your new pack from our CSA webpage. The delivery days for January are noted below.

Also for CSA members, we have a limited number of truly  free-range eggs. We had to start our flock from scratch again with newly hatched chicks earlier this year. The (now) mature chickens range freely over a couple of acres, doing what comes naturally to chickens. The eggs are very tasty, with a bright orange yolk. They will cost you $4.00 per dozen and are only available to Cow Share members who order their monthly CSA bag of beef.

Sadly, our WTR Cow Share openings are all filled, so eggs are for existing members who place a CSA order just now.

Many folk are becoming aware of the wonderful health benefits of bone broth. Our marrow bones and soup bones sell out almost immediately. So now you can buy bulk beef bones through our website. See: Grass-fed beef bones.

The bones are stripped of most of the meat and include knuckles and joints, all of which are perfect for making a delicious and nutritious bone broth. The bags vary a little in weight, and we will commit to making sure that you get at least 4 pounds of bones. The price is $10 per bag/portion. Supplies are limited.

Wild Type Ranch will be doing deliveries only at the Brazos Valley Farmer's Market at (500 Nth Main) Downtown Bryan on Saturday, December 17th from 10:00 AM to 11:00 AM. 

BCS Retail Outlets: We have two retail outlets that you can choose from in Bryan. Car parking is ample and easy at both outlets.

Village Foods and Pharmacy is at the corner of E 29th and Broadmoor, right next to St Joseph's hospital. Their freezers have a selection of our beef products.

Brazos Natural Foods at 4303 S Texas Ave, Bryan have stocked some selected inventory in the freezers there as well.

For Georgetown and Round Rock customers,The Mercantile at Dyer Dairy 7801 E. Hwy 29, Georgetown has a freezer stocked with our products. The delivery date at Dyer Mercantile this month is Thursday, January 12th, between 1:00 PM and 1:20 PM..

SPECIALTY ITEMS!  Based on customer demand, we have a variety of specialty items available through the value and specialty cut page of our online store.
 
Bacon:  We are offering naturally cured, smoked pork bacon.  The same local meat processor that makes our jerky and summer sausage uses a similar (no nitrate, no MSG) vegetable curing process to make bacon.  The pork used to make the bacon is sourced by the processor and not raised by us. The pigs are conventionally raised. $7.50 per package (approx. 1 lb).
 
Our beef jerky makes a great, healthy and locally produced snack.  Because it is smoked, dried and naturally cured (similar process to our summer sausage), it can be safely stored at room temperature for up to a week.  We recommend refrigeration if it will not be consumed within a few days.

We have grass-fed beef pan sausage available. Also called breakfast sausage, this fresh tasting sausage has a nice bite to it, no nitrites or MSG, and is available in 1 pound packs. Perfect for breakfast, lasagna or put it on your pizza.

Summer sausage is available once again. This little beauty is great to have in the freezer, ready for company or simply a snack. It is from our grass-fed beef and produced naturally with no nitrites or MSG. Very tasty!

Halves, quarters and eighths: We are able to offer bulk beef in odd-numbered months. You may reserve a half, quarter or eighth beef in the online store, up through the next 12 months. A $250 deposit is required to hold your spot. This is a great way to get quality natural grass-fed beef at the lowest price available from us.

Thanksgiving is already history for this year and we are steaming into December, with Christmas now just over three weeks away The year seems to have gone by rather quickly.

May we take this opportunity to wish all of our valued supporters all the very best for a safe and happy festive season, and may your New Year be a happy, healthy and prosperous one.

Some good news for Cow Share (CSA) members. We have finally been able to produce a limited number of fully free-range eggs. We had to start again with newly hatched chicks earlier this year after some nasty person decided that they needed all of our laying hens more than we did. All of those hens disappeared one night without leaving a single feather behind...

The replacement chicks are now mature chickens and range freely over a couple of acres doing what comes naturally to chickens. The eggs are very tasty, with a bright orange yolk. They will cost you $4.00 per dozen and are only available to Cow Share members who order their monthly CSA bag of beef. Sadly, our WTR Cow Share openings are all filled, so it is existing members only just now.

November has arrived without all the usual lower temperatures and colors of Fall, although I know that they will come. The grass has slowed right down, but with almost no useful rain in the past few weeks, there is little sign of the beautiful green sprouts of our winter rye-grass that is usually making its presence known around now. Let's hope for a little more moisture. Luckily we have plenty of grass remaining and our cows remain fat and contented! Happy cows make great beef!

Want to buy a half beef, but don't have the freezer space?  We still have a few openings in our popular Cow-share program (formerly known as the CSA/subscription program).  Through this program, you commit to purchasing approximately a half-beef, but receive it in smaller amounts (18-20 lbs at a time) and on your schedule.  Each month, you elect to purchase a pack (share), (or skip a month if you've still got plenty on hand) and pick it up at one of our regular delivery points.  Once you've met the 8-pack minimum, your $155 enrollment fee converts to a deposit that will be applied to your last pack should you decide to leave the program.  For more information, see the Subscription page on our website.  To enroll and order your first pack, go to the cow-share order page.

October is here, bringing such a change from the damp conditions that have prevailed much of the year. We have had no rain to speak of in September despite rain events on all sides of the ranch, just not actually anything but a trace on the ranch. The more moderate temperatures being experienced are a good thing, but the beautiful summer grasses are suddenly drying up and the trees are starting to shed their leaves. Fall is being heralded by nature and is a reminder of just how quickly this year has passed by. We should see the winter rye grass starting to show in places very soon. This has been such a good year for raising grass-fed cattle!

We are now offering a 3-3.5 pound package of marrow bones (aka doggie bones).   The cost is $9.00 per 3-3.5 lb package. Please note, these are not soup bones with the flesh, but bare bones full of marrow. There are only a very limited quantity of these packs available and they sell out very quickly.

Greetings friends, customers and supporters,

September is here, keeping us mighty busy after 12 inches of rain at the ranch during August. Rain is so much better than heat and dust, and the more moderate temperatures being experienced is a good thing. Unusually for this time of the the year when it is typically brown and dry, the ranch is very green, the stock tanks are full to the top and the cattle are fat and sleek. The latest crop of calves are demonstrating a growth rate that is obviously better this year than previous years, because of the rich condition of our pastures and less extreme temperatures.

We have had numerous requests for grass-fed beef bones. Many folk are becoming aware of the wonderful health benefits of bone broth, and our marrow bones and soup bones sell out almost immediately. Well, now you can buy bulk beef bones through our website. See: Grass-fed beef bones. The bones are stripped of most of the meat and include knuckles and joints as well as ribs and other bones, all of which are perfect for making a delicious bone broth. The bags vary a little in weight, but we will commit to making sure that you get at least 4 pounds of bones. The price is $10 per bag.

Cow-share (CSA) customers, now is a good time to check what you have in your freezer and order your new pack from our CSA webpage. The delivery days for September are noted below.

Wild Type Ranch will have a full market presence at the Brazos Valley Farmer's Market at (500 Nth Main) Downtown Bryan this Saturday, September 10th from 8:00 AM to 12 noon. 

BCS Retail Outlets: Should folks in the Bryan/College Station region desire smaller quantities of our beef between our market appearances, we have two retail outlets that you can choose from. Car parking is ample and easy at both outlets. Both locations stock on-demand, so if they don't have what you want, let one of the staff know and they can order it for our next re-stocking.

Village Foods and Pharmacy is at the corner of E 29th and Broadmoor, right next to St Joseph's hospital. (Actual address is Suite 100, 3030 E 29th Street, Bryan). We have stocked their freezers with a relatively wide selection of our beef products. If they don't have what you need, PLEASE discuss this with them so that they can stock it.

Brazos Natural Foods at 4303 S Texas Ave, Bryan have stocked some selected inventory in the freezers there and they will be happy to order in specific cuts to suit your requirements. Should you find that they have not got what you need in stock, PLEASE let them know so that they can expand their inventory.

For Georgetown and Round Rock customers,The Mercantile at Dyer Dairy 7801 E. Hwy 29, Georgetown has a freezer stocked with our products. Now, that's a great little shop worth the visit!  Please note the NEW DELIVERY DAY FOR DYER DAIRY: Dyer Dairy has new hours of Thurs-Sat from 10:00 AM to 6:00 PM. Consequently, we will now be doing our Dyer deliveries on Thursdays, from 1-1:20.  The delivery date at Dyer this month is Thursday, September 15th.

Bacon:  We are offering naturally cured, smoked pork bacon.  The same local meat processor that makes our jerky and summer sausage uses a similar (no nitrate, no MSG) vegetable curing process to make bacon.  The pork used to make the bacon is sourced by the processor and not raised by us.  The pigs are conventionally raised. Due to the growers-only restrictions at the Brazos Market, this product is not available for individual sale at the Brazos Market.  $7.50 per package (approx. 1 lb).
 
Marrow Bones: With folk taking a keen interest in the health benefits of bone broth, we have have asked many times about marrow bones. We are now offering a 3-3.5 pound package of marrow bones (aka doggie bones).   The cost is $9.00 per 3-3.5 lb package. Please note, these are not soup bones with the flesh, but bare bones full of marrow. There are only a very limited quantity of these packs available and they sell out very quickly.

Our beef jerky makes a great, healthy and locally produced snack.  Because it is smoked, dried and naturally cured (similar process to our summer sausage), it can be safely stored at room temperature for up to a week.  We recommend refrigeration if it will not be consumed within a few days.

We have grass-fed beef pan sausage available. Also called breakfast sausage, this fresh tasting sausage has a nice bite to it, no nitrites or MSG, and is available in 1 pound packs. Perfect for breakfast, lasagna or put it on your pizza.

Summer sausage is back in stock, and may be the tastiest batch yet! This little beauty is great to have on hand for picnics, by the pool-side or to stockpile in the freezer for the upcoming school lunch season. 

Halves, quarters and eighths: With our supply secured for the coming year, we are once again able to offer bulk beef in odd-numbered months starting in September. You may reserve a half, quarter or eighth beef in the online store, up through the next 12 months. A $250 deposit is required to hold your spot. This is a great way to get quality natural grass-fed beef at the lowest price available from us.

Want to buy a half beef, but don't have the freezer space?  We still have a few openings in our popular Cow-share program (formerly known as the CSA/subscription program).  Through this program, you commit to purchasing approximately a half-beef, but receive it in smaller amounts (18-20 lbs at a time) and on your schedule.  Each month, you elect to purchase a pack (share), (or skip a month if you've still got plenty on hand) and pick it up at one of our regular delivery points.  Once you've met the 8-pack minimum, your $155 enrollment fee converts to a deposit that will be applied to your last pack should you decide to leave the program.  For more information, see the Subscription page on our website.  To enroll and order your first pack, go to the cow-share order page.

2016 is slipping by at quite a rate, with the Texas summer being a great time to give that grill some exercise. Wild Type Ranch beef goes so well on the grill...

We have two veal eighths that are just begging to be appreciated by some lucky customer. They weigh around 25 pounds and are available here at 25% off the usual price. An absolute bargain, and excellent eating at $180! Once they are gone, there will not be any more at that price.

Want to buy a half beef, but don't have the freezer space?  We still have a few openings in our popular Cow-share program (formerly known as the CSA/subscription program).  Through this program, you commit to purchasing approximately a half-beef, but receive it in smaller amounts (18-20 lbs at a time) and on your schedule.  Each month, you elect to purchase a pack (share), (or skip a month if you've still got plenty on hand) and pick it up at one of our regular delivery points.  Once you've met the 8-pack minimum, your $155 enrollment fee converts to a deposit that will be applied to your last pack should you decide to leave the program.  For more information, see the Subscription page on our website.  To enroll and order your first pack, go to the cow-share order page.

Yes, you read that correctly... We decided to promote our beef just a little.

So, at the past two farmer's markets that we have attended, we have had a drawing, where anyone could enter their name and contact details to win a ten pack of our one pound chubs of ground beef, complete with its own WTR branded insulated tote bag. No purchase was necessary to enter for the prize that is valued all up at $72.50.

The first market where we had the drawing was at the Walker Honey Farm Farmer's Market at Rogers, Texas, on May 30th, otherwise recognized as Memorial Day.

We got there before sun-up as there were over 40 vendors booked to be there. A fairly significant electrical storm and rain (but thankfully not much wind) took its time to pass over us about that time, but after about 10:00 AM it was a lovely sunny day. We set up our stall without too much trouble, and only had to hang on to it once when a breeze sprang up and died just as suddenly.

We had good interest in our products and folk didn't need too much convincing to enter the draw for the ground beef. When the winner was drawn, it was Janet K, from Belton. She told us that winning the drawing had "made her day".

We met with Janet back there at Walker's Honey at Rogers to present her with her tote bag and beef. That certainly put a lovely big smile on her face. She really was excited about it and is keen to share with us how she prepares the product and perhaps even share a recipe or two with us.

If you're in the Rogers area, the Walker Honey Farm is a great little place to stop by at. They have many varied products from their honey industry, as well as mead and wine from their Dancing Bee Winery. Highly recommended.

The next market that we held a drawing for an identical prize was the Brazos Valley Farmer's Market in Bryan. It was the first anniversary of their new location in downtown Bryan. Surprisingly, some of the folk at that market didn't seem as eager to enter the drawing, but a good number did so.

Patricia H. of Bryan was certainly glad that she entered, because hers was the winning entry. We met with her at Village Foods and Pharmacy in Bryan to present the tote bag of ground beef to her. The smile on her face said it all...

Interestingly, neither of these two lovely ladies have been customers of ours previously, but both said that they would be keen to promote us on their private Facebook pages. If you haven't visited our Wild Type Ranch Facebook page, do have a look and 'Like' us if you like what you see!
