Time to reserve you monthly cow-share (CSA) packs for November and/or December.   Eighth-beef CSAs can be ordered for December deliveries.   We will be setting the December schedule within the next few days.  Our delivery schedule for November begins this coming Saturday at the Brazos market.  

With our new ranching partner, Christi, we are now able to offer CSA packs each month.  So, if you're not quite ready for a pack this month, you can order for December.  Eighth-beef CSAs will continue to be offered only in even-numbered months.  We have opened up the CSA program for new monthly CSA subscribers, so if you have friends who want to enroll, please direct them to the CSA order page.

NEW ITEMS!  Based on customer demand, we have added two new items to our online store:  Bacon and Marrow Bones. Both are available through the CSA member order page.  

Bacon:  We are offering naturally cured, smoked pork bacon.  The same local beef processor that makes our jerky and summer sausage uses a similar (no nitrate, no MSG) vegetable curing process to make bacon.  The pork used to make the bacon is sourced by the processor and not raised by us.  The pigs are traditionally raised.  Due to the growers-only restrictions at the Brazos market, this product is not available to our Brazos customers.  $7.50 per approximately 1 lb package

Marrow Bones:  So many of you have asked about marrow bones, that we are now offering a 3-3.5 pound package of marrow bones (aka doggie bones).  We don't typically include these in the CSA packs, because they have no meat on them.  Marrow bones are available though the CSA member order page, or through the packs or value and specialty cuts page.  $9.00 per 3-3.5 lb package

Eggs: we continue to have a limited number of eggs from our backyard flock.  CSA members have first priority for ordering.  You can add eggs  to your CSA order through the CSA member order page: $3.75/dozen

Thanks to our our new ranching partner, Christi, we are opening 10 spots in our popular CSA (aka cow-share) program.  Through this program, you commit to purchasing approximately a half-beef, but receive it in smaller amounts (18-20 lbs at a time) and on your schedule.  Each month, you elect to whether or not to purchase a pack (share), and pick it up at one of our regular delivery points.  Once you've met the 8-pack minimum, your $155 enrollment fee converts to a deposit that will be applied to your last pack when you decide to leave the program.  For more information, see the Subscription page on our website

This week is our big delivery week.  There is still time to order for this week's deliveries (Tuesday deliveries need to be ordered by 8 pm tonight).   If you're not quite ready for a pack this month, you can order for November.  If you (or any of your friends) wish to enroll, please do so through  the CSA order page.

Halves, quarters and eighths: With our supply secured for the coming year, we will once again be offering bullk beef in odd-numbered months. You may reserve a half, quarter or eighth beef in the online store, up through the next 12 months. A $250 deposit is required to hold your spot.

Packs: We have Value, Variety and Grill packs in stock!  They can be reserved through our online store.

Eggs: we continue to have a limited number of eggs from our backyard flock.  You can order eggs, as available, through the online store

We still have a few veal portions available.  Veal must be ordered hrough the veal department of our online store by Wednesday, October 14.  Veal 1/8ths are $9.50 per pound and will weigh 20-25 pounds.  Veal 1/4s are $9.00/lb and will be 40-45 pounds.  Cuts included are ground veal, veal cutlets, veal cubes, rib chops and loin chops 

Our veal is raised the way veal was commonly raised until the 1950s; left to graze at the side of its dam until about 5-6 months of age.  This milk-and-grass fed veal is still delightfully tender, with a mild, slightly sweet flavor.  Ralph taste-tested a veal chop earlier this week (a tough job, but he manned up) and declared it out of this world!

Eggs: We have a limited supply of eggs available for inclusion with your beef order.  They can be ordered through the online store for $3.75/dozen.

Cathy will be doing a delivery this coming Tuesday to Dyer and the Brick Oven.  There's still time to order (by Monday evening).  For Tuesday's delivery, we have ground beef, patties, jerky, summer sausage, and pan sausage.

Wow! Things are really moving here at the ranch, as we reinvigorate the business: We've got Cathy helping us out with deliveries.  We've got a dedicated beef delivery vehicle (check out his new signage on our Facebook page).  Over the past few months, we've been working on increasing our beef supply and are happy to be in a new partnership with a local mother-son team to produce a portion of the calves for our grass-fed program.  In a couple weeks, Ralph and Christi (the mother mentioned above) will be going to purchase a new Red Angus bull to share between our two herds.

What this all means is that by November, we will be fully stocked for each monthly delivery and market schedule.  We will also be able to keep Village Foods and Dyer Dairy stocked.  We are also able to once again regularly offer halves and quarters, and may even open up some spots in our popular subscription/CSA program!

We will be at the Brazos Market, this coming Saturday after our August hiatus.  We have lots of ground beef, summer sausage, jerky, and pan sausage available.  We also have a few packs available.   You can reserve all of the above through our online store, or stop in and see us on Saturday.  We will also have a limited collection of individual cuts (brisket, stir fry, roasts, cutlets) available for sale on a per pound basis at the market.  

Bonus Dyer Delivery date added: Did you want beef in September, but miss the Austin area deliveries? We will be making an additional stop at Dyer Dairy next Tuesday from 2-2:30, next Tuesday, September 15. CSA orders and regular orders only.

This month's previous CSA message

At this point, we anticipate being sold out by the time we finish our September deliveries.  As such, we are not planning October deliveries.  We will be restocking Village Foods and Dyer Dairy Mercantile in October, if possible.  We are adjusting our delivery time slightly for September (and this will likely be the times from now on), so please take note of the new times as listed below.

If you want a CSA pack, but cannot make one of the pickup dates, you are always welcome to come pick up at the ranch.  

We are going through a transition here at the ranch, and appreciate your patience and understanding.  We have had to downsize over the last couple years, due to our family situation and health issues, but have been reluctant to give up on our business and our customers.  We have been working through some options and expect to be gradually increasing supply and improving customer service over the next 6 months.  Cathy Pratt recently joined us as our new market and delivery person. We have a new delivery vehicle.  And we are forging a new partnership with a like-minded cattlewoman which should increase our supply. With these changes, we expect to be back on track soon.

At this point, we anticipate being sold out by the time we finish our September deliveries.  As such, we are not planning October deliveries.  We will be restocking Village Foods and Dyer Dairy Mercantile in October, if possible.  We are adjusting our delivery time slightly for September (and this will likely be the times from now on), so please take note of the new times as listed below.

If you want a CSA pack, but cannot make one of the pickup dates, you are always welcome to come pick up at the ranch.  

We are going through a transition here at the ranch, and appreciate your patience and understanding.  We have had to downsize over the last couple years, due to our family situation and health issues, but have been reluctant to give up on our business and our customers.  We have been working through some options and expect to be gradually increasing supply and improving customer service over the next 6 months.  Cathy Pratt recently joined us as our new market and delivery person. We have a new delivery vehicle.  And we are forging a new partnership with a like-minded cattlewoman which should increase our supply. With these changes, we expect to be back on track soon.

We are FINALLY going to be at the new Brazos Valley Farmer's Market location tomorrow!  We look forward to seeing everyone there!

Packs available:  We have a number of steak sampler, variety, value and grill packs available.  You may reserve yours through our online store (the best way to assure you get one), or purchase onsite at the market.  We are currently sold out of ground beef and patties. Our value and variety packs have 5 lbs of ground beef and 1 pack of patties, in addition to other cuts.

Cuts available at market tomorrow:  We will have some individual cuts available tomorrow, although inventory is limited.  Among the cuts available are doggie shank bones, meaty shank bones, stir fry beef, short ribs, T-bone and ribeye steaks, brisket, oxtail, liver, heart, tongue and a few roasts.  Come out early for the best selection!

Cuts are sold individually only at the market, or through one of our retail outlets (Village Foods in Bryan or Dyer Dairy Mercantile in Georgetown).  

Interested in Essential Oils?  I've been using essential oils for a while, and have really come to appreciate the doTerra products.  If you are interested or curious feel free to ask me about using or ordering.  You can order oils and accessories through my doTerra website.  I can also help you sign up to get a 25% wholesale discount (NO reselling required!  I use it for my family's needs).
