Life at Wild Type Ranch has gone through some upheaval in the past month, leaving us a bit behind on our usual monthly deliveries.  We're back on track, however, with a full delivery schedule for the last half of the month.  You can place orders up to the evening before the delivery.  If you have already placed an order, we've got you logged and hope to be caught up on invoicing within a day or two.  The updated delivery schedule for January is at the bottom of this email and on the calendar page of our website.  At this point, it looks like we will have limited deliveries and availability for February, so be sure to stock up while you can!

Changes in online ordering:  To streamline operations in 2015 and simplify online ordering, we will no longer be taking orders for individual by-weight cuts via the online store.  Packs and items such as ground beef, sausages and jerky can still be ordered individually online.  Cuts will be available at the farmer's market and at our retail outlets in Bryan and Georgetown.  The benefit of this is that all orders can now be paid at the time of ordering via Paypal.   

Subscription/CSA Program has openings!  We are expanding our subscription/CSA program!  Our CSA program is now our main non-retail outlet for our beef.  Through the CSA, you are agreeing to purchase a half beef in smaller increments (ranging from 18-50 lbs) over the course of the next 12-18 months.  We currently have openings in our 1/8th beef CSA and our bi-monthly CSA.  You can read more on our website, and sign up through our online store.

Veal/Baby Beef still available:  Our family has been enjoying our portion of the recent "baby beef".  In actuality, it has turned out to be the most tender veal we have ever offered for sale! We have 3 eighths of baby beef still available for immediate delivery.  We are only selling it by 1/8ths, which weigh 24.2  pounds.  The price per eighth is $9.75/lb.   

Bulk Beef:  We expect to offer bulk beef (halves, quarters and eighths) again later in 2015.  Once we have finished the enrollment period for CSAs, we will make any remaining projected beef harvest available for bulk purchases.  Once we do, you can reserve your bulk beef through the end of 2015.

New! Beef Pan Sausage:  We are beta-testing a new, all-beef pan sausage.  A fresh (not cured or smoked) 1-lb chub of all-purpose sausage with a solid peppery bite. Made locally by Westphalia Market using only our beef.    Please note-because this sausage is a test-batch, it is labelled with Westphalia Market's standard sauage label.  That label lists MSG, but there is NO MSG in our sausage.  If we decide to carry this product permanently, we will have our own labels printed.  

Jerky is back in stock:  Beef jerky is back in stock!  You can order via the online store or purchase at the Brazos Farmer's Market or Dyer Dairy Mercantile.

Summer Sausage Sale:  The fall batch of summer sausage is on sale for $5.00/lb off the usual price.  It can be purchased via the online store under Value and Specialty Cuts.

2015 will see some changes in our family life, and consequently to our beef business.  To streamline operations in 2015 and simplify  online ordering, we will no longer be taking orders for individual by-weight cuts via the online store.  Packs and items such as ground beef, sausages and jerky can still be ordered individually online.  Cuts will be available at the farmer's market and at our retail outlets in Bryan and Georgetown.  The benefit of this is that all orders can now be paid at the time of ordering via Paypal.  As before you can also wait for your invoice and pay via the link on the invoice or pay by cash or check at pickup.  We should be able to get invoices out much more quickly with this new system, as well.

Time to reserve CSA packs for January delivery.  We have one CSA eighth still available, but a full complement of bi-monthly packs. Be sure to order your pack early to avoid missing out.  Please use the CSA member order page to place your order.

New bi-monthly ordering options:  New this year are options when ordering your bi-monthly CSA.  You can now select whether you want your pack to come with summer sausage, beef jerky or pan sausage each time you order.

Summer Sausage:  The fall batch of summer sausage fell short of our expectations in terms of texture; being more bologna-like than typical.  We have received a new batch, which is back up to our standards.  The new batch will be what is included with the CSAs, if the summer sausage option is selected.  Meanwhile, the old batch is on sale for $5.00/lb off the usual price and can be purchased via the online store under Value and Specialty Cuts.  

Notice of eighth beef CSA price increase:  Effective immediately, new eighth beef CSA orders will be priced at $8.50/lb, which translates to the equivalent price of purchasing a half beef.  We only adjust CSA prices once per year, so when we had to raise our half beef prices mid-year last year, the 1/8th beef CSA was lagging behind.  Bi-monthly packs will remain unchanged at $155/pack.

December's beef deliveries start December 9. Orders may be placed via the online store, no later than 6 pm the day prior to the scheduled delivery.  We've got several special items available this month.  Check 'em out!

New! Beef Pan Sausage:  We are beta-testing a new, all-beef pan sausage this month.  A fresh (not cured or smoked) 1-lb chub of all-purpose sausage with just the right pepper bite. Baby Beef available in January:  We will have another baby beef available for January delivery.  At this time, we are only selling it by 1/8ths, which are expected to weigh 20-25 pounds.  The price per eighth is $9.75/lb.  The next step up from veal, "baby beef" are cattle that are harvested at about 1 year of age.  Lower in fat, high in tenderness and with a more delicate flavor than our regular beef.  Steaks and roasts will be smaller than our regular beef.  Many grass-fed beef producers sell only beef from cattle at this age. We anticipate harvesting only 1-2 baby beef per year.  You can order through a special department in our online store. Don't miss out!

Summer Sausage: Our all-beef, natural cure (no MSG, no added nitrates) summer sausage is perfect for holiday entertaining.  Or use it for a light meal or hearty snack paired with crackers and cheese.  We even dice it and put it on Pizza.  You can find it in the Value and Specialty cut section of our online store.   

Jerky:  Our beef jerky was a huge success.  So much so, we sold out before we could get the next batch sent off for processing.  We expect to have it in stock sometime in December.  We will notify our customers as soon as it is available.

Don't miss your chance to stock up at the Brazos Valley Farmer's Market this weekend.   We are having an unprecedented sale on ground beef at the Brazos Market. Ground beef will be $4.99 per pound (excludes extra lean).   

Remember that we will not be at the market in December, so now is the time to stock the freezers to get through the holidays.  You may place an order for pickup at the market Saturday, or stop by our booth and pick up what you want.   Orders may be placed via the online store, no later than 6 pm the day prior to the scheduled delivery.

Special items in stock:  We have T-bones this month, along with all our other great steaks!  Also in stock, we have soup bones, marrow bones (i.e. doggie bones) and chuck roasts for great cold weather meals.  Finally, we have extra lean ground beef available this month! (Extra lean not included in our ground beef sale)

November's beef deliveries start Saturday Nov 9 at the Brazos market, and go into the following week. Orders may be placed via the online store, no later than 6 pm the day prior to the scheduled delivery.

Standing Rib Roast and other special items: This month, we again have one a standing rib roast, weighing 5.45 pounds, available for ordering through the store: http://wildtyperanch.com/store/roasts-standing-rib-roast.  We have T-bones this month, along with all our other great steaks!  Also in stock, we have 8-10 pound bags of beef tallow (fat) for rendering, on the Value and Specialtly Cuts Page.  Finally, we have extra lean ground beef available this month! (Extra lean not included in our ground beef sale)

Ground Beef Sale at the Brazos Market Nov 9:  This month, we are having an unprecedented sale on ground beef at the Brazos Market.  Ground beef will be $4.99 per pound (excludes extra lean).  For our other locations, 10-packs are on sale for $57.50. a savings of $10 over the usual pack price and a savings of $1.75/lb over individual packages.  10-pack sale price expires Nov 15.

Time to reserve CSA packs for November delivery!  This month, we also are running a members-only special on 10-packs of ground beef (save $10) and summer sausage (save $1.00 per stick).  

1/8th BEEF DEADLINE:  If you want an 1/8th CSA pack this month, please place your order by 10 am Oct 28th.  After that time, the inventory will be reduced to 0.  If you miss the deadline, but still want more than an bi-monthly, you may order 2 bimonthly packs.

Time to reserve CSA packs for November delivery!  This month, we also are running a members-only special on 10-packs of ground beef (save $10) and summer sausage (save $1.00 per stick).  

1/8th BEEF DEADLINE:  If you want an 1/8th CSA pack this month, please place your order by 10 am Oct 28th.  After that time, the inventory will be reduced to 0.  If you miss the deadline, but still want more than an bi-monthly, you may order 2 bimonthly packs.

October's beef deliveries start Saturday, at the Brazos market, and go into next week.  We have one final delivery for October at Live Oak on Sunday October 26.  Orders may be placed via the online store, no later than 6 pm the day prior to the scheduled delivery.

This month, we have one special item-a standing rib roast, weighing 6.05 pounds.  Available for ordering through the store: http://wildtyperanch.com/store/roasts-standing-rib-roast

Ground Beef Sale:  While supplies last, we are clearing out the last of our higher fat ground beef.  10-packs are on sale for $57.50. a savings of $10 over the usual pack price and $1.75/lb over individual packages.

Brazos Market this Saturday:  We're looking forward to seeing our favorite Farmer's Market customers this coming Saturday at the Brazos Market.  We are well-stocked for on-site purchases, or you can place an order via the online store.  Orders will be packed Friday afternoon and ready for Saturday, even if you don't get an invoice.

New Time for Round Rock Deliveries:  There has been a slight shift in the time for Round Rock deliveries.  The pickup time at Renaissance Square is now 1:25-1:45.
