Our February deliveries start tomorrow in Temple, continue with the Brazos Farmer's market on Saturday and finish up Tuesday with Dyer and Round Rock.  There is still time to order, but don't delay; our inventory is at an all-time low.

Veal/Baby Beef still available: Our family has been enjoying our portion of the recent "baby beef". In actuality, it has turned out to be the most tender veal we have ever offered for sale! We have 1 eighth still available. We are only selling it by 1/8ths, which weigh 24.2 pounds. The price per eighth is $9.75/lb ($235.95 total).

Premium Roasts Available:  We currently have 1 half tenderloin roast (1.55 lbs) and 1 standing rib roast (5.05 lbs) in stock.  These are available for order via the roast page of the online store or can be purchased at the market Saturday.  Ideal for a special Valentine's day dinner!

Subscription/CSA Program has a few remaining openings!  We are expanding our subscription/CSA program!  Our CSA program is now our main non-retail outlet for our beef.  Through the CSA, you are agreeing to purchase a half beef in smaller increments (ranging from 18-50 lbs) over the course of the next 24 months.  We still have a few openings in our  bi-monthly CSA.  You can read more on our website, and enroll and pay your membership deposit through our online store.  We still have 1 January/February pack available, and/or you can start your membership with the March/April packs.

At the Brazos Market this weekend:  This weekend at the market, we've got some lovely ribeye and NY strip steaks for the romantic Valentine's day dinner.  We also have 1 oxtail (get there early) and a variety of other cuts.  Don't forget our jerky and summer sausage, too!

Jerky and Summer Sausage:  Beef jerky is back in stock and the new batch of summer sausage is back up to our artisan-quality standards.   You can order via the online store or purchase at the Brazos Farmer's Market or Dyer Dairy Mercantile.

Beef Pan Sausage:  The beta test on the pan sausage went well, so once we have our label approved, we will make that regularly available.

Interested in Essential Oils?  I've been using essential oils for a while, and have really come to appreciate the doTerra products.  If you are interested or curious feel free to ask me about using or ordering.  You can order oils and accessories through my doTerra website.  I can also help you sign up to get a 25% wholesale discount (NO reselling required!  I use it for my family's needs).

Please see the online calendar, or the schedule at the bottom of this e-mail for details on the latest schedule.

Thanks for your continued support and patronage,

We just updated our inventory and market/delivery schedule for spring.  March/April CSA packs can now be reserved. Order your pack early to avoid missing out, especially if you want organs (liver, heart, tongue).  Please use the CSA member order page to place your order.

We have one Jan/Feb bi-monthly CSA pack still available for delivery either to Temple tomorrow, Brazos on Saturday or Dyer or Round Rock next Tuesday.

Bi-monthly ordering options:  Remember, you can now select whether you want your pack to come with summer sausage or beef jerky when you order.  The new batch of summer sausage is back up to our old standards, by the way.  The beta test on the pan sausage went well, so once we have our new label approved, we will make that regularly available as an option, too.

Baby Beef still available:  We have 1 eighths of baby beef still available.  We are only selling it by 1/8ths, which weigh 24.2  pounds.  The price per eighth is $9.75/lb.

After a bit of a hiatus, we're finally going to be back at the Brazos Valley Farmer's Market tomorrow, Jan 24!  We've got some special items and a sale on our famous summer sausage, so be sure to come out and see us.  At this point, it looks like we will have limited  availability for the February market date (Feb 14) so stock up while you can!

This weekend, we have summer sausage (on sale!),  beef jerky and our new pan sausage, veal/baby beef packs plus tenderloin and standing rib roasts available in addition to plenty of ground beef and individual cuts for sale.  You can also sign up for our subscription proram at the market and take home your first bi-monthly pack.

Veal/Baby Beef still available: Our family has been enjoying our portion of the recent "baby beef". In actuality, it has turned out to be the most tender veal we have ever offered for sale! We have 2 eighths of baby beef still available, and will have it at the market tomorrow (or you can order it for next week delivery). We are only selling it by 1/8ths, which weigh 24.2 pounds. The price per eighth is $9.75/lb ($235.95 total).

Subscription/CSA Program has openings!  We are expanding our subscription/CSA program!  Our CSA program is now our main non-retail outlet for our beef.  Through the CSA, you are agreeing to purchase a half beef in smaller increments (ranging from 18-50 lbs) over the course of the next 24 months.  We currently have openings in our 1/8th beef CSA and our bi-monthly CSA.  You can read more on our website, and sign up through our online store.  We will have packs available at the market this weekend for instant enrollment.

Premium Roasts Available:  We currently have 2 half tenderloin roasts (1.55 lbs each) and 1 standing rib roast (5.05 lbs) in stock.  These are available for order via the roast page of the online store or can be purchased at the market tomorrow.  Ideal for a special Valentine's day dinner!

Round Rock, Dyer, Live Oak, Austin Arboretum and Temple deliveries next week: We will be squeezing ALL our deliery points into a one-week blast next week.  There'still time to order!

New! Beef Pan Sausage:  We are beta-testing a new, all-beef pan sausage.  A fresh (not cured or smoked) 1-lb chub of all-purpose/breakfast sausage with a solid peppery bite. Made locally by Westphalia Market using only our beef.    Please note-because this sausage is a test-batch, it is labelled with Westphalia Market's standard sauage label.  That label lists MSG, but there is NO MSG in our sausage.  If we decide to carry this product permanently, we will have our own labels printed.

Jerky is back in stock:  Beef jerky is back in stock!  You can order via the online store or purchase at the Brazos Farmer's Market or Dyer Dairy Mercantile.

Summer Sausage Sale:  The fall batch of summer sausage is on sale for $6.75 per stick ($5.00/lb off the usual price).  It can be purchased via the online store under Value and Specialty Cuts or pick some up at Saturday's Market.

Life at Wild Type Ranch has gone through some upheaval in the past month, leaving us a bit behind on our usual monthly deliveries.  We're back on track, however, with a full delivery schedule for the last half of the month.  You can place orders up to the evening before the delivery.  If you have already placed an order, we've got you logged and hope to be caught up on invoicing within a day or two.  The updated delivery schedule for January is at the bottom of this email and on the calendar page of our website.  At this point, it looks like we will have limited deliveries and availability for February, so be sure to stock up while you can!

Changes in online ordering:  To streamline operations in 2015 and simplify online ordering, we will no longer be taking orders for individual by-weight cuts via the online store.  Packs and items such as ground beef, sausages and jerky can still be ordered individually online.  Cuts will be available at the farmer's market and at our retail outlets in Bryan and Georgetown.  The benefit of this is that all orders can now be paid at the time of ordering via Paypal.

Subscription/CSA Program has openings!  We are expanding our subscription/CSA program!  Our CSA program is now our main non-retail outlet for our beef.  Through the CSA, you are agreeing to purchase a half beef in smaller increments (ranging from 18-50 lbs) over the course of the next 12-18 months.  We currently have openings in our 1/8th beef CSA and our bi-monthly CSA.  You can read more on our website, and sign up through our online store.

Veal/Baby Beef still available:  Our family has been enjoying our portion of the recent "baby beef".  In actuality, it has turned out to be the most tender veal we have ever offered for sale! We have 3 eighths of baby beef still available for immediate delivery.  We are only selling it by 1/8ths, which weigh 24.2  pounds.  The price per eighth is $9.75/lb.

Bulk Beef:  We expect to offer bulk beef (halves, quarters and eighths) again later in 2015.  Once we have finished the enrollment period for CSAs, we will make any remaining projected beef harvest available for bulk purchases.  Once we do, you can reserve your bulk beef through the end of 2015.

New! Beef Pan Sausage:  We are beta-testing a new, all-beef pan sausage.  A fresh (not cured or smoked) 1-lb chub of all-purpose sausage with a solid peppery bite.

Summer Sausage Sale:  The fall batch of summer sausage is on sale for $5.00/lb off the usual price.  It can be purchased via the online store under Value and Specialty Cuts.

2015 will see some changes in our family life, and consequently to our beef business.  To streamline operations in 2015 and simplify  online ordering, we will no longer be taking orders for individual by-weight cuts via the online store.  Packs and items such as ground beef, sausages and jerky can still be ordered individually online.  Cuts will be available at the farmer's market and at our retail outlets in Bryan and Georgetown.  The benefit of this is that all orders can now be paid at the time of ordering via Paypal.  As before you can also wait for your invoice and pay via the link on the invoice or pay by cash or check at pickup.  We should be able to get invoices out much more quickly with this new system, as well.

The other big change for 2015 is that we are expanding our subscription/CSA program!  Our CSA program will become our main non-retail outlet for our beef.

We will again be offering bulk beef (halves, quarters and eighths) in 2015, for those who are not ready to commit to the CSA.  Once we have finished the enrollment period for CSAs, we will make any remaining projected beef harvest available for bulk purchases.  Once we do, you can reserve your bulk beef through the end of 2015.

Baby Beef still available:  We have 3 eighths of baby beef still available for January delivery.  We are only selling it by 1/8ths, which weigh 24.2  pounds.  The price per eighth is $9.75/lb.

New! Beef Pan Sausage:  We are beta-testing a new, all-beef pan sausage.  A fresh (not cured or smoked) 1-lb chub of all-purpose sausage with a solid peppery bite.

You can order via the online store or purchase at the Brazos Farmer's Market or Dyer Dairy Mercantil.

Summer Sausage Sale:  The fall batch of summer sausage fell short of our expectations in terms of texture; being more bologna-like than typical.  Although still quite tasty, we decided to put it on sale for $5.00/lb off the usual price.  It can be purchased via the online store under Value and Specialty Cuts.

Interested in Essential Oils?  I've been using essential oils for a while, and have really come to appreciate the doTerra products.  If you are interested or curious feel free to ask me about using or ordering.  You can order oils and accessories through my doTerra website.  I can also help you sign up to get a 25% wholesale discount (so reselling required!).

Time to reserve CSA packs for January delivery.  We have one CSA eighth still available, but a full complement of bi-monthly packs. Be sure to order your pack early to avoid missing out.  Please use the CSA member order page to place your order.

Our apologies, but we are unable to pin down the January schedule until after January 8th.  In our delivery schedule section, I've listed two alternate dates for each delivery point.  I will be sending out another email once the schedule is set.

New bi-monthly ordering options:  New this year are options when ordering your bi-monthly CSA.  You can now select whether you want your pack to come with summer sausage, beef jerky or pan sausage each time you order.

A fresh (not cured or smoked) 1-lb chub of all-purpose sausage with just the right pepper bite.

You can elect to receive beef jerky as your "extra" in your bi-monthly CSA and/or order extra packages via the online store.

Summer Sausage:  The fall batch of summer sausage fell short of our expectations in terms of texture; being more bologna-like than typical.  We have received a new batch, which is back up to our standards.  The new batch will be what is included with the CSAs, if the summer sausage option is selected.  Meanwhile, the old batch is on sale for $5.00/lb off the usual price and can be purchased via the online store under Value and Specialty Cuts.

Notice of eighth beef CSA price increase:  Effective immediately, new eighth beef CSA orders will be priced at $8.50/lb, which translates to the equivalent price of purchasing a half beef.  We only adjust CSA prices once per year, so when we had to raise our half beef prices mid-year last year, the 1/8th beef CSA was lagging behind.  Bi-monthly packs will remain unchanged at $155/pack.

Please see the online calendar, or the schedule at the bottom of this e-mail for details on the latest schedule.

December's beef deliveries start December 9. Orders may be placed via the online store, no later than 6 pm the day prior to the scheduled delivery.  We've got several special items available this month.  Check 'em out!

New! Beef Pan Sausage:  We are beta-testing a new, all-beef pan sausage this month.  A fresh (not cured or smoked) 1-lb chub of all-purpose sausage with just the right pepper bite.

Baby Beef available in January:  We will have another baby beef available for January delivery.  At this time, we are only selling it by 1/8ths, which are expected to weigh 20-25 pounds.  The price per eighth is $9.75/lb.  The next step up from veal, "baby beef" are cattle that are harvested at about 1 year of age.  Lower in fat, high in tenderness and with a more delicate flavor than our regular beef.  Steaks and roasts will be smaller than our regular beef.  Many grass-fed beef producers sell only beef from cattle at this age. We anticipate harvesting only 1-2 baby beef per year.  You can order through a special department in our online store. Don't miss out!

Summer Sausage: Our all-beef, natural cure (no MSG, no added nitrates) summer sausage is perfect for holiday entertaining.  Or use it for a light meal or hearty snack paired with crackers and cheese.  We even dice it and put it on Pizza.  You can find it in the Value and Specialty cut section of our online store.

Jerky:  Our beef jerky was a huge success.  So much so, we sold out before we could get the next batch sent off for processing.  We expect to have it in stock sometime in December.  We will notify our customers as soon as it is available.

No Brazos Market in December:  December orders can be picked up Sunday, Dec 28 12:30-1:00 in the Parking lot of Village Foods

Time to reserve CSA packs for December delivery!  We will begin packing December orders on Tuesday, November 25.  Please place your order for December packs by noon of that day.

Please use the CSA member order page to place your order.

New! Beef Pan Sausage:  We are beta-testing a new, all-beef pan sausage this month.  A fresh (not cured or smoked) 1-lb chub of all-purpose sausage with just the right pepper bite.

Baby Beef available in January:  We will have another baby beef available for January delivery.  At this time, we are only selling it by 1/8ths, which are expected to weigh 20-25 pounds.  The price per eighth is $9.75/lb.  As CSA members, you have first crack at this beef before it is announced to the general mailing list.

Summer Sausage: Special pricing for CSA members of $9.50/stick, if ordered through the CSA Member order page.

No Brazos Market in December:  December orders can be picked up Sunday, Dec 28 12:30-1:00 in the Parking lot of Village Foods

Please see the online calendar, or the schedule at the bottom of this e-mail for details on the latest schedule.

Don't miss your chance to stock up at the Brazos Valley Farmer's Market this weekend.   We are having an unprecedented sale on ground beef at the Brazos Market. Ground beef will be $4.99 per pound (excludes extra lean).

Remember that we will not be at the market in December, so now is the time to stock the freezers to get through the holidays.  You may place an order for pickup at the market Saturday, or stop by our booth and pick up what you want.   Orders may be placed via the online store, no later than 6 pm the day prior to the scheduled delivery.

Special items in stock:  We have T-bones this month, along with all our other great steaks!  Also in stock, we have soup bones, marrow bones (i.e. doggie bones) and chuck roasts for great cold weather meals.  Finally, we have extra lean ground beef available this month! (Extra lean not included in our ground beef sale)

Interested in Essential Oils?  I've been using essential oils for a while, and have really come to appreciate the doTerra products.  If you are interested or curious feel free to ask me about using, ordering or becoming a wholesaler for them.  You can order oils and accessories through my doTerra website.

New Time for Round Rock Deliveries:  There has been a slight shift in the time for Round Rock deliveries.  The pickup time at Renaissance Square is now 1:25-1:45.

Please see the online calendar, or the schedule at the bottom of this e-mail for details on the latest schedule.

Thanks for your continued support and patronage,
